Tomato, Feta & Asparagus Tart

For some unknown reason I panic bought quite a lot of gluten free puff pastry just before Christmas which then left unused started to take up room in my fridge !! One evening when I started to feel a bit spring like I bit the bullet and whipped up this lovely, quick and easy savoury tart !.   There are a number of gluten free puff pastries on the Irish market,  this one is Jus-Roll and Galberts is another one to look out for (both available in Dunnes)


1 pack/roll of puff pastry (the Ju-Rol pastry is 320gm in weight and contains 1 pastry sheet)

1/2  jar Unglu-d pizza sauce

1/2 block of feta cheese

3 Spring Onions

4 Sprigs of Asparagus

Handful of cherry tomatoes

1 tbsp olive oil


Heat the oven to 200c.

Be sure to read the guidelines on the packaging about how to store and use the pastry before you start.   Jus-Rol has to be removed from the fridge 10 minutes prior to using.

Wash and Prepare your vegetables.   Slice the spring onions and asparagus lengthways.  Chop the tomatoes in half. 

Remove the pastry from it's packaging and place onto the lined tray. 

Pour the Unglu-d pizza sauce over the pastry base and spread out evenly with a spoon or spatula.

Sprinkle the feta cheese on top of the sauce,  then add the chopped asparagus, spring onion and tomato.   

Drizzle with olive oil and pop into the oven for 20 minutes.

Delicious served with a nice side salad and you can store any leftovers in the fridge for lunch the next day !
