Gluten Free Raspberry Scones

I don't know how may different scone recipes I've tried that just didn't quite hit the mark BUT I think I've finally found one I like !  I also gave a couple to my Mum to try,  she's not gluten free and pretty fussy and she gave them the thumbs up so here goes;

Ingredients (this makes 6 scones, just double up if you want more);

250gm gluten-free flour

1 tsp gluten-free baking powder

50gm caster sugar

1/2 tsp salt 

Zest of 1 orange

75gm cold butter

75gm frozen raspberries (straight from freezer).  

2 eggs (1 for scone mix , 1 for brushing the scones prior to baking)

150ml milk (I used dairy free milk and it worked really well) 

Method;

Heat oven to 180c

Mix all dry ingredients and orange zest in a bowl. Work in the cold butter with your fingertips until you get a mix that resembles breadcrumbs. Add raspberries. 

Combine 1 egg with the milk in a separate bowl,  add to the dry mix and gently combine with a spoon until you have a dough that holds together. 

Turn dough onto a floured board or surface.  Cut out your scones, pop on a baking tray and brush with beaten egg.  Pop in the oven for 18 to 20 mins.  

Serve warm with butter and jam.  Enjoy !
