Gluten Free & Dairy Free Coconut & Almond Cake

I love baking cakes that only have a few ingredients,  are minimal fuss and also taste great and this one ticks all those boxes.    


4 eggs

150gm sugar (I use soft brown sugar,  you could also use coconut sugar or replace the sugar with honey or agave syrup)

110gm coconut

200gm ground almonds

1 tsp baking powder

Zest of 1 lemon


Heat the oven to 180c.  Grease or line an 8 inch cake tin.

Separate the eggs into two bowls.  Beat egg whites until stiff.

Whisk the egg yolks and sugar together.  Stir in all the dry ingredient and lemon zest. 

Fold in the eggs whites. 

Pour mixture into the prepared tin and pop in the oven for 30 to 40 minutes.

Remove from the oven,  allow to cool and dust with some icing sugar.  Delicious served on it's own or with your favourite yoghurt or some creme fraiche.
