Gluten Free, Dairy Free Chocolate & Chai Macaroons
Every week I make chocolate macaroons to sell at the market & they sell out super fast. Recently I decided to mix it up a little & add some chai for a bit of extra vavavoom :) So here's the recipe, give them a lash & see what you think !
Ingredients - Makes 16;
300gm Coconut
360gm Icing Sugar
4 drops Vanilla
35gm Cocoa Powder
35gm Chai Powder (I use the Drink Me Chai brand)
4 egg whites
Dark chocolate pieces roughly chopped ( I use Green & Blacks, Aines chocolate or Roisins chocolate). You could also use chocolate chips or white chocolate pieces.
Method;
I use a mixer with a paddle for this recipe, it can however be done by hand.
Heat the oven to 180c. Line 2 baking trays with parchment paper.
Combine all the dry ingredients into a mixing bowl & add in the vanilla.
Add in the egg whites one at a time & combine fully.
Once everything is mixed, grab an ice cream scoop or a tablespoon , scoop out balls of the mixture & place on the baking tray.
Place your chocolate pieces on top of each macaroon & place in the oven for 15 minutes.
The will look gooey when they come out & will be very soft to the touch but be brave, don't be tempted to put them back in the oven ! Just let them cool on the tray & then transfer to a wire rack to cool off fully.
If you place these in an airtight container they will last for 3/4 days.
